This ancient grain is packed with trace elements and minerals, making it a regional superfood popular in vegan cuisine as a soup ingredient, sausage, or even truffle. The Badische Bauland, in the northern part of the region, is the world’s primary green spelt-growing area. The grain was discovered over 300 years ago during a severe famine when it was harvested early to avoid spoilage due to heavy rains – a tradition that continues today. Since 2015, Franconian green spelt has been recognised for its unique origin across Europe.

The “Limpurger Rind” is Württemberg’s oldest cattle breed. From April to October, they graze on fresh grass and herbs, feeding solely on homegrown feed in winter. Their special task: preserving local meadows, fostering balanced growth of trees, grasses, and herbs. Both castration and slaughtering processes are stress-free, ensuring both respect and exceptional meat quality. Only oxen from certain districts, such as Schwäbisch Hall, may bear the name “Pasture-fed oxen from Limpurger Rind.”

This regional, protected pig breed from Hohenlohe was almost extinct by the mid-1980s. Amazingly, the breed was revived from just seven remaining pigs, bringing back its distinct black-and-pink colouring and floppy ears. Now, with a population of around 70,000, the Schwäbisch Hall Pig symbolises an entire region. These pigs, known for their high intelligence, love playing piggy football outdoors. The pigs are fed non-GMO feed from the EU, contributing to a low-stress environment and enhancing meat quality.

Once common on the Swabian Alb, the Alb Lentils disappeared from fields but have now been rediscovered as a delicacy. It was accidentally found in an archive in St. Petersburg, and, after years of cultivation, this old variety is now widely grown on the Alb again.

The Swabian Alb is known for its extensive meadow orchards, covering more than 26,000 hectares, and for its biodiversity. Rare Swabian pear varieties, such as “Palmische Birne", "Oberösterreicher Weinbirne”, and “Champagner Bratbirne" still grow here. The red-violett “Geißhirtle” pear, with its unique sweet-cinnamon taste, is ideal for preserving and was discovered around 1800 by a local goatherd near Stuttgart.

The rare wild truffles of Baden-Württemberg still thrive, with seven types found at 121 truffle sites in the orchard meadows and vineyards. Some local winemakers combine wine and truffle production. The Blackforest Boar Distillery even offers a gin infused with local truffle.

This fine, mild onion from the Höri peninsula on Lake Constance has been cultivated for centuries and became the region’s primary crop. Since 2014, the “Höri Bülle” has been recognised with a PGI (Protected Geographical Indication) status. Flat, round, mild, and versatile, this onion is celebrated at the annual “Bülle Festival” on the first Sunday in October.

The mild climate creates perfect conditions for various vegetables. Traces of cultivation date back to the 8th century when Benedictine monks planted gardens around their monastery. Today, 60 different farms on Reichenau Island produce 60,000 tonnes of tomatoes, cucumbers, lettuce, and lamb’s lettuce each year – 40% of it organically – for exclusive export to Baden-Württemberg and Bavaria, contributing to climate protection with shorter transport routes. Protected from imitation with the EU “PGI” (Protected Geographical Indication) seal.

The national dish of Swabia: These stuffed pasta pockets are cooked in broth and served directly in it. Alternatively, they can be pan-fried and garnished with roasted onions. According to legend, monks invented the so-called "Herrgottsbscheißerle" (God-cheaters) during Lent, hiding the forbidden meat filling inside the dough.

One of the most famous Swabian recipes, Spätzle can either be pressed or scraped – it's a matter of taste. Homemade is always best. The sticky dough, made from flour and eggs, is scraped from a "Spätzlesbrett" (wooden board) directly into boiling water. Then it’s served with gravy, lentils, or as cheesy Kässpätzle.

Savoury or sweet – Schupfnudeln are perfect as a side dish for game, poultry, and roasts. With sauerkraut, they form a classic hearty combination, while the sweet version with cinnamon and sugar is equally popular. Schupfnudeln are a staple of Southern German cuisine, with origins tracing back to the Thirty Years’ War, when soldiers crafted these elongated noodles from flour rations and water. Recipes and names vary by region.

This Swabian stew, originating from a Stuttgart neighbourhood, features plenty of vegetables, potato slices, Spätzle, and beef in a rich broth. Especially popular in winter, it’s a warming dish that’s perfect for cold days.

This beloved soup consists of beef broth and pancakes-strips (called Flädle in Alemannic dialect). The pancakes are first cooked, then sliced into thin strips and added to the clear broth just before serving.

Tripe has been mentioned as a meal as far back as Homer’s writings. Once meat became more affordable in the last century, this traditional speciality gained a reputation as a "poor man's dish." Today, variations like "Saure Kutteln" (sour tripe) are increasingly popular. Often, they are pre-prepared by butchers, saving the cleaning and hours of boiling in vinegar-salt water. At home, you can cut the tripe into strips or thin slices and cook it briefly in a sauce or fry it.
